Asparagus is a classic spring vegetable in France, and this creamy soup is a great way to showcase its delicate flavor. With just a few simple ingredients, this recipe is easy to make and perfect for a light lunch or dinner.

Ingredients
  

  • 500 g fresh asparagus trimmed and chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 litre vegetable stock
  • 1/2 cup crème fraîche
  • salt and pepper to taste

Instructions
 

  • In a large pot, sauté the onion and garlic until softened.
  • Add the asparagus and broth and bring to a boil. Reduce heat and simmer until the asparagus is tender.
  • Using an immersion blender or regular blender, puree the soup until smooth.
  • Stir in the creme fraiche and season with salt and pepper to taste.
  • Serve hot with crusty bread on the side.
