Method
- In a large pot, sauté the onion and garlic until softened.
- Add the asparagus and broth and bring to a boil. Reduce heat and simmer until the asparagus is tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Stir in the creme fraiche and season with salt and pepper to taste.
- Serve hot with crusty bread on the side.
