Asparagus Soup

Asparagus is a classic spring vegetable in France, and this creamy soup is a great way to showcase its delicate flavor. With just a few simple ingredients, this recipe is easy to make and perfect for a light lunch or dinner.

Ingredients
  

  • 500 g fresh asparagus trimmed and chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 litre vegetable stock
  • 1/2 cup crème fraîche
  • salt and pepper to taste

Method
 

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the asparagus and broth and bring to a boil. Reduce heat and simmer until the asparagus is tender.
  3. Using an immersion blender or regular blender, puree the soup until smooth.
  4. Stir in the creme fraiche and season with salt and pepper to taste.
  5. Serve hot with crusty bread on the side.
